As part of the Taste of Game campaign the BASC Midlands team and the School of Artisan Food have joined forces to promote game meat as a healthy alternative. Based in the heart of Sherwood Forest on the Welbeck Estate in north Nottinghamshire, the school has newly refurbished training rooms especially equipped to teach breadmaking, cheesemaking, brewing, butchery, charcutierie and preserving.
The school, a registered charity, is especailly keen to provide opportunities for the local community as well as to teach enthusiasts, existing and aspiring food producers and complete newcomers. Short courses, and a one-year advanced diploma in either butchery, charcuterie, baking or dairy are avaiable.
