Swinton Park Cookery School is offering One and Two day game cookery school courses led by Chef Director Stephen Bulmer – previously of the Raymond Blanc Cookery School at Le Manoir aux Quat’ Saisons. A one day game course teaches techniques including the preparation of venison, game bird and rabbit, including plucking and skinning, cooking or 6-8 dishes, plus sauces from the bones and a range of garnishes. The two day course also sees Richard Townsend, the Managing Director of Yorkshire Game, supplier of Swinton Park and the Swinton Park Cookery School join the class to discuss rearing of game and demonstration of prep techniques. Dishes taught at the Swinton Park Cookery School Game course include Venison Saddle with Chocolate, Game Parfait and Roast Grouse with Blackberries. The Swinton Park Cookery School re-opened at the end of August 2013 following an extensive refurbishment to include state of the art Gaggenau appliances and now offers six workstations for up to 12 guests to use in pairs and learn new skills.
