One of the UK’s top game chefs, Kevin Roxby, will be making his first appearance at the National Countrysports Fair in Moira Demesne in Northern Ireland on 29-30 May 2010.
Kevin will be demonstrating game cookery within BASC’s ‘Shooting Village’ at the fair. Kevin is considered to be one of the finest game chefs in the country and is a firm believer in locally sourced food.
Kevin said: “The main influence on my cooking is a traditional grounding in the old-style classic cookery that I have updated to modern presentations with a little Asian twist in some of my dishes.”
BASC Northern Ireland director, Roger Pollen, said: “BASC has a strong interest in game cookery and we actively promote the use of game in recipes through initiatives such as our “Game’s On” campaign. Kevin will be cooking several dishes including pheasant, wood pigeon and rabbit as well as giving tips to visitors looking for ideas on how to cook game.”
